Co-founders Tobin Polk and Lance Schnorenberg, both 33 started roasting in a fourth-floor loft located across the street at their new location in 2011 under the name Lofted Coffee (with local clients including Greenpoint's Budin and Soho cart service Peddler).
Sey's preference for buying micro-lots or whole harvests, from single farmers has earned it the praise of New York City coffee enthusiasts. In the past they made a six-bag micro-lot purchase of Danilo Dones Sitio Catucai 785 from Brazil's Espirito Santo region. The beans were picked at the peak of ripeness, then floated to get rid of any imperfections, then dry fermented for 36 hours before being dried on the farm. The result is a blend with hints of berry lemongrass, and melon.
Sey's dedication extends beyond its shop to improve the overall wellbeing of growers and staff, and customers. It uses biodegradable disposables and composts, preventing waste from the landfill and converting it into agents that lower harmful greenhouse gases as well as nourish soil. It also does away with gratuity, which puts baristas into a position to support their livelihoods as well as encourage them to focus on their craft.
